The Gavalas winery is one of the oldest in Santorini, with the family active in wine production since the late 19th century. As a result, tradition holds significant importantance here. While generations come and go, the heart of the winery in Megalochori continues to beat strong.

George Gavalas embodies this tradition in both words and practice, now joined by his son Vangelis. Together, they are dedicated to preserving rare grape varieties on the island, such as Katsanos and Xenolos.

The introduction of a blue bottle for their core cuvée may initially appear unconventional, yet it is a nod to the winery`s identity—one that has been present since 1998, coinciding with my own beginnings in the wine industry.

Santorini Gavalas showcases an impressive blend of grapes sourced from various regions across the island, all vinified in stainless steel tanks. However, what truly surprises is the wine`s vibrant colour, highlighting the addition of rare green notes that are uncommon in Santorini wines.

Visually, the wine suggests a fruity white, and the aromatic profile confirms this, boasting intense aromas of pear, angelica, and sweet scented geranium. While this DOC label may not immediately reveal its terroir, it is enriched with a distinctive minerality that speaks to its coastal origins.

On the palate, the experience is engaging; the wine presents a full-bodied, exuberant character that is softened by its roundness. This is not to say it lacks acidity; rather, it delivers a superb lesson in managing acidity, proving that the sharpness often associated with white wines may stem from an absence of fruit.

The Stolzle Exquisit White 42cl glass, paired with a serving temperature of 11-13ºC, enhances the wine`s impressive finish. Its remarkable structure makes it an ideal companion for delightful pairings, such as rich seafood dishes (like dusky grouper or golden grouper), white meats, or even ribs.

The offerings from Gavalas winery represent a stark contrast to the understated, sour, and tannic styles seen in some wines today. Their Santorini expression is vibrant, soft, and generously fruity. However, the €37 price point does place it at the higher end of the market. Yet, this wine remains a compelling choice for those seeking quality and character, standing alongside other exceptional selections like the Santorini Native Zymes.
