Reproducing such a successful and beloved restaurant model is no easy task. However, this particular "relocation" is more than just a faithful replica of the original Basegrill; it captures a dual sense of the term. It is as precise as the original while remaining completely devoted to the principles it has always embraced. Spyros and Vangelis Liakos remain the key guarantors of the menu, but they are accompanied in this venture by a longtime colleague from their days at Cookoovaya, the experienced and soft-spoken chef Spyros Pavlidis, who is also part of the business structure. He is a quiet yet formidable presence in the kitchen, consistently demonstrating his mastery.
